Ensure the barbecue is lit well in advance and wait until the coals are glowing red and powdery on the surface before starting to cook.
Never put cooked meat on a plate that has been used for raw meat and never use a marinade on cooked meat that has been in contact with raw meat.
Use separate tongs for raw and cooked meat and don’t put raw meat on the barbecue next to cooked or partially-cooked meat.
Keep raw meat away from salads, breads, etc.
Move food around the barbecue and turn regularly.
Remember: even if food is charred on the outside, it may not be cooked thoroughly. Ensure meat is piping hot all the way through, without a pink bit in sight.
Make sure you wash your hands after handling raw meat.
